For the past few months, I found myself spending $15 a day on Shoyu Ramen at this new Poke/Japanese restaurant near my house. One of my major goals this year is to not spend too much money on eating out so I knew I needed to figure out the recipe myself. The only problem was that I was doing this on a budget. After a few substitutions and grocery runs later I finally came up with the PERFECT imitation shoyu ramen!
Ingredients:
- Lard (Sub: Bacon grease)
- Beef Broth (Sub: Broth of choice)
- Sweet Onions
- Garlic
- Ginger
- Green Onions
- Ramen Noodles
- Eggs
- Mirin (Sub: White Wine)
- Brown Sugar (Sub: Honey)
- Fried Onions
- Soy Sauce
- Seaweed
- Corn
- Roasted Chicken
Eggs:
Pour 1 1/2 cups of soy sauce into a sealable bowl
Add 1 Tablespoon of honey
Add 1/2 cup of mirin or white wine
Boil your eggs to your desired texture
Peel the shell
Let eggs soak in the mixture for at least 1 hour (Overnight for best results)
The Broth:
While your heat is on medium-high add a tablespoon of lard into a pot until it has completely melted
Dice half of a sweet onion and add it to the pot with some minced garlic until translucent
Pour in two cups of beef broth and two cups of water
Tablespoon of Soy sauce
Add in your seasonings of choice as much or as little as you desire
Let the broth come to a boil then change the temperature to low
Noodles:
Boil water and oil in a pot
Follow the instructions for how long your noodles should be in boiling water
Plate Your Ramen:
Chop and add the white endings of 1 green onion to a bowl
Shred a quarter size of ginger and add to the bowl
Add as much or as little broth as you'd like to the bowl
Strain your noodles and add into to the bowl
Add some shredded chicken (Pre-made Roasted chicken saves you time!)
Add your corn, more green onions, fried onions, and seaweed)
Cut your egg in half and add it to the bowl
